Tommy Diaz from the Philippine Islands shares her flair for
Islander cuisine that can be attributed through her many travels.
She has lived and worked in the kitchens of Athens,
Saudi Arabia, Marianas Islands, France and traveled extensively
throughout Europe. These many travels have inspired Tommy to create
our signature dishes. Using the freshest local ingredients found
in Pike’s Place Market, Tommy aims for a truly unique culinary affair.
